In the 1870s, Justus von Liebig, one of the founders of modern organic chemistry, demonstrated that spent brewer’s yeast could be autolyzed and concentrated into a dark, salty, vitamin‑rich paste. His insight laid the groundwork for Marmite in the UK (1902) and Vegemite in Australia (1923).
For the mini‑NEBC, we’re pairing Germany’s Vitam‑R Klassik, which is made from spent baker’s yeast and is milder than both Marmite and Vegemite with a citrusy IPA.

TASTING EXPECTATIONS: Bootleg’s bright Citra citrus and Nelson Sauvin white‑wine grape and passionfruit notes form a savory bridge with Vitam‑R Klassik. Its soft, pillowy mouthfeel and moderate bitterness cut through the salt, while the spread’s umami depth amplifies the hops’ tropical and herbal character.
